- 4oz/110g self-raising wholemeal flour
- 4oz/110g self-raising white flour
- 1oz/30g semolina
- 5oz/140g vegan margarine
- 3oz/85g brown sugar
- 1tbsp golden syrup
- 6oz/170g mixture of dried fruit
- 1 tsp arrowroot or cornflour
- 1 tsp vanilla essence
- 4 tbsp cold water
Method
- Preheat oven to Gas Mark 5/ 190˚C/ 375˚F
- Mix the wholemeal flour, white flour and semolina together in a bowl and rub in the margarine.
- Stir in the sugar, golden syrup and dried fruit.
- In a small bowl, mix together the arrowroot, vanilla essence and cold water. Stir this into the flour mix. The mixture should be quite dry, barely holding together.
- Put small heaps (approx. dessert spoon size) onto a greased baking sheet, sprinkle with demerara sugar (optional) and bake for approximately 15 minutes until golden brown.
