Method

  1. Preheat oven to Gas Mark 5/ 190˚C/ 375˚F
  2. Mix the wholemeal flour, white flour and semolina together in a bowl and rub in the margarine.
  3. Stir in the sugar, golden syrup and dried fruit.
  4. In a small bowl, mix together the arrowroot, vanilla essence and cold water. Stir this into the flour mix. The mixture should be quite dry, barely holding together.
  5. Put small heaps (approx. dessert spoon size) onto a greased baking sheet, sprinkle with demerara sugar (optional) and bake for approximately 15 minutes until golden brown.
