Serves 3-4
The simple addition of garlic and cheese (Twineham Grange vegetarian 'parmesan' is available from Sainsbury's and is indistinguishable from the real thing) transforms the mundane sprout to an elegant vegetable.
- 1lb / 450g brussel sprouts
- 2oz / 40g butter
- 45ml / 3tbsp grated parmesan
- 2 large cloves of garlic, crushed
- Preheat the oven to gas mk.4 / 350°F / 180°C
- Parboil the sprouts in a pan of boiling water for 3 minutes, then drain.
- Transfer to an ovenproof dish, add butter, garlic and parmesan, and toss well.
- Cover the dish and bake for 20-25 minutes, giving a brief stir part way through cooking time.
