The simple addition of garlic and cheese (Twineham Grange vegetarian 'parmesan' is available from Sainsbury's and is indistinguishable from the real thing) transforms the mundane sprout to an elegant vegetable.

  1. Preheat the oven to gas mk.4 / 350°F / 180°C
  2. Parboil the sprouts in a pan of boiling water for 3 minutes, then drain.
  3. Transfer to an ovenproof dish, add butter, garlic and parmesan, and toss well.
  4. Cover the dish and bake for 20-25 minutes, giving a brief stir part way through cooking time.
