Chocolate Cream Pie
Serves 8+(very rich!)
Ingredients
- 225g/8oz digestives,finely crushed
- 100g/4oz vegetable margarine,melted
- 225g/8oz plain chocolate
- 50g/2oz caster sugar
- 300ml/half pint of vegan ‘thick ’cream
- 2 tbsp of rum or sherry or port (optional)
- 250g/9oz silken tofu
Method
- Mix together the biscuits and melted margarine and use to line a 20.5cm/8in flan tin/dish.
- In a heavy based saucepan, melt together the chocolate and cream over a low heat until smooth.
- Blend together the to alcohol and sugar until smooth, then add to the chocolate mixture and mix thoroughly.
- Spoon into prepared case and chill for 3 hours or overnight.
