Method

  1. Place all of the ingredients, except the oil for frying, in a blender and blend until smooth. Or you can whisk by hand until there are no lumps.
  2. Heat a small amount of oil in a frying pan until piping hot. Drain off any excess and pour enough of the batter mixture in to the pan to thinly cover the bottom.
  3. Fry on one side for about a minute, then loosen the edges with a spatula and flip over to cook the other side for another minute, or until done.
  4. Remove from pan and keep warm in the oven set at its lowest setting. Add more oil to the pan if necessary and repeat until all of the mixture is used up.
  5. Serve with sugar and lemon juice, jam, maple or golden syrup. Alternatively, pancakes are delicious with a savoury filling.
