Ingredients
- 1 packet vegetarian puff pastry
- 2 tbsp olive oil
- 1 red onion,cut into thin wedges
- 1 courgette,sliced
- 1 red pepper,chopped
- 3tbsp vegan pesto (or make yourself omitting the parmisan, or use a vegetarian-style parmisan)
- 1lb mushrooms,sliced
- Half tin of chopped tomatoes
- handful of basil leaves,roughly chopped
- salt &pepper to taste
Method
- Preheat oven to gas mark 6/200°C/400°F
- Put all the vegetables into a roasting tin/dish, add oil and mix until coated, then roast in oven until cooked (approx 40 mins).
- Meanwhile, cut pastry in half and roll each half thinly to fit 2 rectangular baking trays.
- Blend chopped tomatoes with pesto then spread over pastry. Spoon cooked vegetables over and place in oven for 15 -20 minutes or until the edges are risen and have turned golden brown. Scatter fresh basil over the top.
