  1. Preheat oven to gas mark 6/200°C/400°F
  2. Put all the vegetables into a roasting tin/dish, add oil and mix until coated, then roast in oven until cooked (approx 40 mins).
  3. Meanwhile, cut pastry in half and roll each half thinly to fit 2 rectangular baking trays.
  4. Blend chopped tomatoes with pesto then spread over pastry. Spoon cooked vegetables over and place in oven for 15 -20 minutes or until the edges are risen and have turned golden brown. Scatter fresh basil over the top.
