Serves 4
Ingredients
- 3 tbsp olive oil
- 1 onion, chopped
- 2oz mushrooms, sliced
- 3oz red pepper, chopped
- 2oz French beans, chopped
- 1 green chilli
- 1 tsp turmeric
- 1 tsp curry powder
- 2oz green olives
- 450 ml water
- 5oz long grain rice
- 1 vegetable stock cube
- 1 tin chopped tomatoes
- 2oz peanuts
- a little tinned braised tofu
Method
- Fry onion, mushrooms, pepper and french beans for a few minutes.
- Add chilli and spices and fry for another minute.
- Add olives, water, rice, stock cube and tinned tomatoes and simmer until rice is cooked.
- Add peanuts and tofu.
